This time I added 1Cup of packed Brown Sugar and only used 1/4 cup of white sugar.
It was just the added flavor they needed!
1 1/2 C All purpose flour
1/2 C Quick Oats
1 C packed brown sugar
1/4 C white sugar
2t Baking Soda
3 over ripe Bananas
1/2 C Sweetened Flake Coconut
3/4 C veg oil
1T Vanilla extract
Preheat oven to 375 degrees and line muffin tin with papers.
Mash Bananas in a bowl add the eggs, oil and vanilla and brown sugar. Stir until combined.
In another bowl mix flour, white sugar, salt, baking soda, and cinnamon, stirring until combined.
Add the dry ingredients to the wet mixture and stir until combined.
Stir in coconut.
Fill muffin cups 3/4 full and bake until set, I think about 10-15 minutes.
Cool on a rack and enjoy!
I think this would also be good with Macadamia nuts and maybe some brown sugar thrown in too.
This is not a "golden brown" muffin. It has a rich caramelized color to it.
